「辦桌」是臺灣在地深具特色的節慶飲食文化，其獨具的文化特殊性，是臺灣珍貴的飲食民俗文化資產。《辦桌》音樂會即是以吹打樂的演出形式結合活潑的故事演出，生動地表現出總舖師們辦桌時發生的種種趣事。運用鍋、碗、瓢、盆、爐灶、柴火、桌椅…等等的生活器具，融合傳統打擊樂器敲敲打打的聲響與演奏技巧，表現出獨特的臺灣辦桌文化，傳達在地喜慶的熱鬧歡欣氣象。臺灣國樂團於2016年「臺灣真美」系列策畫《辦桌》音樂會，演出後獲得熱烈迴響、廣受好評，2018重新整編，再造佳績！2019年NCO再度受邀訪美，熱鬧的「寶島辦桌」即將把臺灣最草根的民俗文化以最精緻的手法帶到美國舞臺，除了撫慰在美僑胞的思鄉之情，也讓臺灣國樂把臺灣故事說給世界聽。此次高雄行前公演，也讓臺灣鄉親搶先大飽辦桌耳福，一聽為快！

“Roadside banquet” is a distinctive festive cuisine culture in Taiwan, and its unique cultural particularity is a valuable cuisine and folk cultural heritage. Roadside Banquet concert combines ensemble of Chinese wind and percussion instruments with lively story performance to vividly present the various interesting stories of executive chefs during roadside banquets. The unique Taiwanese roadside banquet culture is rendered by integrating daily appliances including woks, bowls, gourd ladles, pots, stoves, and firewood with the striking sound and performance technique of traditional percussion instruments to convey the local festive and delightful atmosphere. The NCO produced the Roadside Banquet concert during the 2016 “Taiwan, the True Beauty” concert series and it was widely praised and well received, hence the NCO is reorganizing in 2018 and hopes to achieve another great result. In 2019 the NCO received another invitation to visit the United States and is going to bring the most grassroots folk culture of Formosa Roadside Banquet to the American stage in the most delicate manner to to not only soothe the nostalgia of overseas Chinese, but also narrate the story of Taiwan to the world through Chinese music of Taiwan. This pre-tour public performance in Kaohsiung provides audience there the opportunity to listen to the mesmerizing sounds of roadside banquets before anyone else!
